I am obsessed with spaghetti squash lately! So many different ways to use it and a fab low carb option to noodles. If I dont eat all the casserole the minute it comes out the oven then it makes great left overs! To be honest, I’m not the best leftover eater, but this is one of those dishes that is just as good, if not better, the second day!
Yield: 6 servings Prep Time: 10 min Cook Time: 45 min
INGREDIENTS:
- 1 Spaghetti Squash
- 1 lb 93% Lean Ground Turkey
- 1 Red Onion
- 3 Bell Peppers (any color)
- 2 cans (14.5 oz) Diced Tomatoes with Italian Seasoning
- 1 cup Monterey Jack Cheese
- 1 Tablespoon Olive Oil
- 3 cloves Garlic
- 1 teaspoon Salt
- 1 teaspoon Italian Seasoning
- 1/2 teaspoon Black Pepper
- 1/2 teaspoon Crushed Red Pepper Flakes
- Chopped fresh Parsley for garnish
Step 1:
- Preheat oven to 375 Degrees F
- Place the Spaghetti Squash in the microwave for 15 minutes to soften it, making it easier to cut. (It will be extremely hot to touch after the 15 min
- Cut the spaghetti squash long ways and scrape out the seeds
- Place the 2 halves of the squash face down in a 9 x 13 pan.
- Fill the bottom of the pan with water (about 1-2 inches high)
- Bake in oven for 40 min or until you can pierce the skin of the squash with a fork easily.
- When done, scrape the inside of the squash halves with a fork to create “noodles.” Then set aside.
- Once done, change the oven temperature to 350 Degrees F.
TIP: You can do this step the night before and store the “noodles” in the fridge.
Step 2:
- Chop 3 Bell Peppers, 1 Red Onion and Parsley.
- Grate Monterey Jack Cheese.
TIP: Both of these can be done the night before.
Step 3:
- Place 1 Tablespoon Olive Oil in a LARGE pan.
- Add chopped Bell Peppers & Red Onion to pan and saute on medium heat until softened.
- Add 1 teaspoon Salt & 1/2 teaspoon Black Pepper
Step 4:
- Add 1 lb Ground Turkey to the veggies. Cook Turkey thoroughly until browned.
Step 5:
- Add in Spaghetti Squash, 2 cans Diced Tomatoes (drained), 3 cloves Garlic (minced), 1 teaspoon Italian Seasoning, 1/2 teaspoon Crushed Red Pepper Flakes.
Step 6:
- Use a slotted spoon to drain and transfer the mixture to a 9 x 13 pan to bake.
- Add 1 cup Monterey Jack Cheese
- Bake for 20 min
- Top with Fresh Parsley
