Oh Cowboy Caviar, how I love you! This dish is a must have to keep handy in your fridge. I put it on my tacos, my husband topped his morning scrambled eggs with it and my daughter ate it with chips! I recently made it into a wrap which was AMAZING!! Needless to say, it’s a family favorite and it will be yours too!

Yield: 6 Servings Total Time: 5 min
INGREDIENTS
- 2 Bell Peppers (any color)
- 1 Avocado
- 1 Jalapeno (optional)
- 1 Red Onion
- 2 Roma Tomatoes
- 1 cup Cilantro
- 1 can (15 oz.) Black Beans
- 1 can (15 oz.) Sweet Corn
- 1/4 cup Olive Oil
- 2 teaspoons Salt
- 2 teaspoons Chili Powder
- 1 teaspoon Black Pepper
STEP 1:
- Chop 2 Bell Peppers, 2 Roma Tomatoes, 1 Red Onion, 1 cup Cilantro, 1 Jalapeno (remove seeds and spine for less heat). Add all ingredients to a bowl.
- TIP: I like to add Avocado fresh each time I eat it rather than include it all in the mixture
STEP 2:
- Add 1/4 cup Olive Oil, 2 teaspoons Salt, 2 teaspoons Chili powder, 1 teaspoon Black Pepper into the same bowl from step 1.
STEP 3:
- Add 1 can Black Beans (drained & rinsed) & 1 can Sweet Corn (drained & rinsed) into the bowl.
- Mix all ingredients.
Enjoy!!
